★Create A Marinade:
Coat each piece of meat with vegetable oil and rub in the seasoning, marinate for 2-24hours in the fridge, place on a baking tray and cover with foil cook for 2.5-4 hrs on Gas Mark 3, 160c 320f with the last 30 mins without the foil (length of time depends on how thick)
